"Ah, candied beets to calm my nerves."
Beets are a food that only Rolf is often seen eating. They first appear in "Oath to an Ed" where Rolf becomes frustrated with the Eds constantly failing to earn a badge. Rolf leaves the Eds and eats candied beets to calm his nerves, allowing the Eds another chance so long as they'll leave him to finish his treat. Beets reappear in "Dim Lit Ed" where Rolf collects a large bag of beets for Edd's scavenger hunt. Even though beets weren't needed to win, Rolf claims that "the humble beet is the answer to all riddles." This hints that, in addition to candied beets calming his nerves, beets themselves serve some significant purpose in his culture.
